How to make grilled onigiri and dashi miso chazuke

Based on the manga Misoshiru de Kanpai! (味噌汁でカンパイ!) by the mangaka Sasano Sai, I’ll be showing you how to make delicious and crispy grilled miso onigiri and dashi miso chazuke. This delicious Japanese recipe has lots of umami, easy to make, and you don’t need many ingredients to make it.

How to make grilled miso onigiri and dashi miso chazuke:

Ingredients
2 cups of cooked rice
2 tsp. of miso
1 tsp. of mirin
1 shoot of green onion
1 packet of dashi (5g)
2 cups of water

Recipe:
Line your ovens aluminum pan with foil
Wet your hands before you form the onigiri (rice ball) to help prevent rice from sticking to your hands
Preheat your oven to 450°F
Take about 1 cup of rice into your hands, form the rice into a triangle shape, then put it on the pan when you’re finished
Repeat the previous step to make 1 more onigiri
Put the onigiri pan into the oven for 20 minutes, ten minutes on each side of the onigiri (oil is not necessary as the heat will prevent the rice from sticking to the aluminum foil)
Cut the green onion shoot into 5 mm (.2 inch) pieces and put them into a small bowl
Put 2 tsp. of miso into the bowl
Put 1 tsp. of mirin into the bowl
Mix contents of bowl until smooth
Take the onigiri out of the oven
Put the miso seasoning onto the onigiri
Put the onigiri back into the oven at 450°F for 5 minutes
Boil 2 cups of water
Open the dashi packet and put the dashi powder into a container (a teapot was used in the video)
Pour the boiled water into the dashi powder container
Mix the dashi powder and water to make a broth
Take out the onigiri from the oven
Put one grilled onigiri into a bowl
Pour dashi broth over the grilled onigiri in a bowl

That’s it! Not much ingredients, easy to make, and you’ll have a delicious snack or a light meal with lots of umami for anytime you’re feeling hungry.
